Influence of the new aquapolymers protolon and oxylon on the milling properties of wheat

The studies were carried out on hard endosperm grain of the Slavyanka 196 Bulgarian variety with total vitreousness of 82%. The grain was subjected to cold conditioning by moisturizing with aquapolymers up to 16.5%, followed by a 18-h tempering and a second moisturizing to 17 % a half-hour before milling.It was found that wheat moisturizing with Ox aquapolymers can have positive effect on its milling properties, as well as on the flour quality and the milling efficiency. Grain moisturizing with Pr aquapolymers and with mixtures of Pr and Ox aquapolymers had no favorable effect on its milling properties.
