Situation of, and quality in, Hungarian milk production

It can be stated in Hungary, since 1985 up to the present day, milk qualification and purchase connected with prices and consequently validated have positively affected milk quality. A comparison of domestic qualitative rules with the criteria valid in EU countries shows that there are no significant differences between them in the field of requirements to quality. However, in the European Union further aggravations can be expected after 2000 (in the field of the number of somatic cells and total number of germs), which indicates at the same time also the trend of development to be followed in Hungary. In this country, by 1995 the ratio of extreme and first-class quality milk has amounted to 95 percent. This is due to the favourable quality of milk purchased from large-scale farms, whereas defective quality is mostly connected with petty farmers. The above favourable situation is related to the quality of the milk purchased. As for the improvement in quality, the reserves outlined in the paper may play an important role; it is primarily interest whish could stimulate their utilization
