Soaking ability of milk

Soaking ability (capillarity) of milk using chromatography paper Whatman No. 3 and thin layers of Silufol, Alufol and Lucefol was studied. Biggest differences in the spot diameter were observed when Alufol or Whatman No.3 were used. Using the soakage ability of milk, the dependence of spot diameter on the degree of milk watering was studied. A close dependence was observed (Whatman No. 3: r=0.9963, Alufol: r=0.9935). Using the soakage ability of milk on the above mentioned materials, it was possible to determine as little as 5 % addition of water to the milk
