The aim of the work was to describe the effect of nutrition on changes in rumen fluid and in the techological properties of milk. Five Holstein-Friesian dairy cows in the 2nd lactation were given model feed rations - control feed ration (KD1), feed ration with surplus of digestible crude proteins PDI (KD2), with lack of energy (KD3), and with lack of fibre (KD4). The concentration of VFA, pH and activity of infusoria in rumen fluid were studied and from the technological properties of milk, souring activity, curdling ability, coagulation time, elasticity and time holder rennet coagulum were evaluated. The feed ration with PDI increased markedly the production of total volatile fatty acids and acetic acid as well as the activity of infusoria. Feed ration KD4 decreased the proportion of acetic acid and propionic acid (P less than 0.05). Correlations were proved between the studied parameters of rumen content and technological properties of milk (0.28++ to 0.46++)
