Mercury contents in milk and dairy products

Determination of mercury contents in the area of Serbia (Yugoslavia) has been carried out in order to examine possible correlation between its amount in soil and fodder and its level in milk and dairy products. According to the results, mercury content in soil and fodder was within the limits of 0.01-0.04 mg/kg, while the contents in milk was below the level of sensitivity. In about 40 samples the mercury contents in cheese and powder milk was below the level of sensitivity, while in about 60 samples varied from 0.002 to 0.028 mg/kg, being somewhat higher in powder milk than in cheese. All these amounts are considerable below the maximum allowed quantities for milk and dairy products. It has been concluded that the mercury does not accumulate in milk and that the share of milk and dairy products in total intake of mercury is irrelevant.
