Freeze-drying of a lactic acid bacteria: Lactobacillus acidophilus

Freeze-drying of a lactic acid bacteria (Lactobacillus acidophilus) has been performed in the presence of different cryoprotectants (non fat dry milk solids associated with glycerol, CaCO3, MnSO4, maltose, saccharose or sodium glutamate). Survival rates obtained after lyophilization attain high values (from 74 to 100 per cent) in many cases. A good conservation (from 75 to 100 per cent) was also observed under N2 atmosphere after 2 months.
