A comparison between different methods to measure lean meat content in carcasses of pigs

In 1998 an experiment was carried out in the Department of Pig Breeding of the Institute of Anima Science to compare the basic meat and fattening performance traits of the pigs of the Estonian Landrace and Large White breed. Goal of this study were to compare meat characteristers of carcasses of the pigs (measured with lean meat meter Ultra-FOM 100 and ZP-method) and to distribute carcass by lean meat content according to SEUROP classification. The present paper deals with some relationships between meat and fattening traits on the basis of experimental data. The data of 451 pigs of the Estonian Landrace breed (originated from 25 sire lines) and of 121 pigs of the Large White breed (from 11 sire lines) were used. At slaughter the live weight of the investigated pigs was from 95 to 105 kg. The fattening and meat traits were estimated by the progeny testing method. pH-value of lean meat was estimated in musculus longissimus dorsi within 24 hours after slaughter
