[Honey application in milk production: Analytical review]

The Republic of Kazakhstan pays special attention to production of foodstuff of high nutritional and biological quality. One of the ways of settling of this problem is creation of milk products with addition of honey. With this aim at the chair of technology of milk production of the State University "Semei" research on improvement of the technology of production of the national milk products is performed. The technology of production of mixed sour milk product "Balkoje" consisting of normalized milk, cereal base, honey, culture, and table salt. As a cereal base is used millet which in combination with honey significantly increases organoleptic properties of the product and its biological quality. A new sour milk product "Balkoje" is balanced for content of amino acids and carbohydrates and enriched with vitamins and macro- and microelements.
