Fine structure of the fruit surface of seven apple cultivars

The fine structure of skin surface of "Cortland", "Lodel", "Sampion", "Elstar", "Jonagold", "Idared" and "Gloster" apples was examined with a scanning electron microscope. There were significant differences between cultivars, mainly in the number and size of cracks in the wax layer of the cuticle. The lowest number of cracks was observed on "Cortland" apples and the highest number on "Lodel" and "Gloster". The wax layer on fruit surface without blush was usually more cracked than that on the side with blush. Only "Lodel" and "Cortland" apples did not show visible differences between surfaces with and without blush. The results indicated that the formation of cracks on apple fruit cuticle is cultivar- and environment-dependent
