Influence of different methods of defatting on some starch properties

Potato starch, maize starch and wheat starch were defatting with different methods: extraction in Soxhlet apparatus with ethyl ether, petroleum ether or 85 percent methanol, and starch keeping in the 75 percent n-propanol at 80 deg C or 0.3 percent NaOH at 20 deg C. Defatting of very low lipids content potato starch as well as cereal starch rich in lipids had influence on starch properties. The changes of starch properties depended on the kind of starch and defatting method. The biggest changes of starch properties caused method with n-propanol. Defatting method with the usage of ethyl ether caused smaller changes of starch properties
