Evaluation of the new edible mushroom varieties (Agaricus bisporus (Lange), Sing.)

The fruit bodies of edible mushroom varieties, Amycel 2200, Clarone 307, Italspawn 44 and Somycel 516, were tested. The mushrooms were grown on the horse manure prepared in a traditional way. The content of dry matter and soluble protein as well as the activity of proteolitic and oxide - reduce enzymes in the fruit bodies were analysed. From among the tested mushrooms Amycel 2200 was characterized by a high dry matter content and the weakest activity of proteolitic and oxide - reduce enzymes
