Shrinkage and changes in density of carrots and potatoes during convective drying

Shrinkage of carrots and potatoes during convective drying was studied. For carrots a linear relationship between shrinkage and relative water content was observed. The real shrinkage was smaller than the theoretical one, while the density was kept at a constant level up to moisture ratio 0.2; then it increased along with water content decrement. Shrinkage of potatoes proceeded in two ranges of relative water content. For moisture ratio 0.1-1 the real shrinkage corresponded to volume of water evaporated. In that range of relative water content the density of dried potatoes increased. For moisture ratio 0.1 shrinkage kept a constant level, the material became porous and density decreased rapidly
