Characterization of ewe milk

Situation in number of sheep an in production of ewe milk in Slovakia during the last years is described. Chemical, physical, microbiological and organoleptic properties of ewe milk are reviewed. Characteristics of milk quality in compiliance with Slovak standard STN 57 0510 Ewe Milk are defined. The information is assigned especially for ewe milk cheese producers, mainly of sheep lump cheese
