The influence of body weight on carcass yield and composition and meat quality of kids of Domestic White goat and its crosses

Three kid genotypes divided into two weight groups were included in the investigation. Average body weight of kids in the first group was 15 kg, kids being 78.33 days old on average. Average body weight of kids in the second group was 22 kg and average age 133.66 days. On the basis of analyses performed and results obtained it was established that kids of average body weight of 22 kg in all three genotypes had lesser dressing percentage, greater contribution of the 1st category meat and greater contribution of fat tissue (intermuscular) in carcass, more favourable technological (less thermal treatment shrinkage) and biological (greater content of tryptophan, and less hydroxipromine) meat traits. Regarding the chemical composition, in the meat of kids of greater body weight there was less water and more intermuscular fat and protein. According to meat organoleptic traits (odour, softness, succulence, and flavour) there were no significant differences between weight groups, only the odour of tallow was somewhat more unpleasant in the meat of kinds with greater body weight. As for the influence of genotype on the investigated traits, no significant differences were established between the kinds of Domestic White goat and its crosses in R1 generation.
