Consumers' panel assessment related to the structure and extent of meat consumption on the Belgrade market [Yugoslavia]

The aim of this study was, based on consumers' opinions, to obtain the data on the structure and extent of the consumption of domestic animals' meats, poultry, and salt- and fresh-water fish on the Belgrade market (Yugoslavia). The data were obtained by the method of interviewing families with different number of members. The results obtained show that on the Belgrade market, in 1996, average consumption of domestic animals' raw meat was around 55 kg per capita. In the total consumption of domestic animals' meats, pork ranked first, its share being around 31%. Significant differnces was established for meat consumption among families with different number of members. Of all poultry meats, chicken meat ranked first, average monthly consumption being 1.5 kg per capita. The consumption of salt- and fresh-water fish amounted to slightly above 0.5 kg per family member per month. Meat consumers on the Belgrade market most frequently choose first-class meat. They buy meat in socially-owned shops primarily choosing in according to its appearance, trimming and colour.
