The chemical constants of milk fat as measure of milk quality

In this paper deals with the examination chemical constants of milk fat: Reichert-Meissis number, Polenskes number and Kettstorfers number. Examinations were made for samples which were under suspicion that some other fats with significantly lower quality were added to them. Obtained values for these constants show the presence of false fat i.e. other non-milk fat materials, which were noticed in a great number (67%) of examined samples.
