Quality control of products made from thermally treated soybean grain

Several methods for quality control parameters determination that are necessary at observing thermal soybean treatment optimization, as well as for quality estimation of final products obtained from thermally treated soybean grain (urease activity, trypsin inhibitor content and nitrogen solubility index - NSI) are shown in this work. Besides the methodology we have also given survey of quality control of final products obtained from thermally treated soybean grain, examined during the period from Januar 1, 1997 to May 1, 1998.
