In the culture conditions tested, two characteristic parameters related to the agitation and aeration of the culture broth determine the value of some biological parameters (apparent growth rate, amount of biomass, xylanase productivity) as of the volumetric oxygen transfer coefficient (KLa): the volumetric agitation power and the superficial air velocity. In addition, a significant effect of the mixing conditions on mould micromorphology is shown. Subsequently, this study realised at pilot scale (6 to 500 liters-fermenters) allows the following conclusions: xylanase yield is determined not only by the amount of biomass but also by its quality. These two variables are both settled by the volumetric agitation power and the superficial air velocity. Scaling-up of the production to industrial scales must be based on these two characteristic parameters.
