Formulation of nata de pina making

In this research nata de pina was produced from pineapple waste extract. Fermentation media produced from pineapple waste filtrate which was mixed with water 1:3 (pineapple waste: water) and heated at 80 deg. C, and the filtrate was then boiled at 100 deg. C and added with sucrose (6 percent, 8 percent, 10 percent), ammonium sulphate (0.0 percent, 0.4 percent, 0.6 percent, 0.8 percent). Fermentation media was inoculated by 10 percent Acetobacter xylinum culture and fermented for ten days until nata de pina produced. The highest nata de pina yield was 54.13 percent, i.e. from the added 10 percent sucrose and 0.8 percent ammonium sulphate formulation
