Modelling of vegetables drying in a tunnel drier

Mathematical model of drying vegetables in a tunnel drier was developed. Drying shrinkage of product and heating od carriages were also considered. The model was logically and empirically verified with good results on an industrial tunnel drier at drying carrot, parsley, onions and mushrooms. Presented model may be applicable to determine predicted final moisture content of the material dried under given conditions. Also the manner of computing the operation parameters of a tunnel drier was described
