Comparison of carcass quality in heifers of various commercial types by means of EUROP systems

Carcass quality in heifers of various commercial types were evaluated according to the criteria compatible with the system EUROP, and they were confronted with the technological dissection of carcass sides. The compared groups consisted of heifers of dual-purpose type, i.e. Slovak Pied and improved Slovak Pied cattle (K), milk type with blood proportion of Holstein Friesian breed over 75% (ML) and meat type, i.e. crosses of improved Slovak Pied cows with Blonde d'Aquitaine and Limousine bulls (MS). According to the 5 classes of meat content there were only two heifers MS included into the highest E class. Into the U class were also incorporated mostly the animals of MS group (58.82%) and of K group (11.63%). The most ML heifers were included into O class (70%). When the fattiness was evaluated there were K heifers represented in all 5 classes, the animals of MS group only in classes 1 to 3. Meat proportion in carcass sides was the highest in heifers of MS group (78.36%) and highly significantly lowest in heifers of ML group (74.42%). Proportion of bones was also the lowest in heifers of MS group (14.92%)
