Chemical analysis for quality and starch extraction of various sweet potato varieties grown in Thailand

Thirty-four sweet potato varieties which were grown in 1990 in Thailand were analysed for chemical composition. Moisture content was in the range of 56.92-71.40 %, protein content was 3.19 to 12.06 % on dry weight, fibre was 4.96 to 12.83 %, ash was 1.37 to 4.15 % and dry matter of sweet potatoes was in the range of 28.60-43.08 %. The sweet potato varieties were classified into three groups:- below 31 % as low group which had 5 varieties, medium for 31-36 % which had 19 varieties, high for value ouer 36 % which had 10 varieties. The starch content below 20 % as low group which had 4 varieties. medium for value 20-25 % which had 19 varieties, high for value over 25 % which had 11 varieties. Eleven varieties of sweet potatoes which had high dry matter and starch content were as follows: MAE-JO, HEARTEGOLD, NEGRO-2, TAINUNG-69, HAODANG-JAI-KAO, PIS57-28, NEGRO-AYUTHAYA, HAO-KAO-JAI-MUANG, HOM-MALI, MUNKAO-SUKOTHAI and MALAYSIA. The average percentage of yields of starch extraction from the pilot plant and extraction recovery was 12.66 and 52.43 respectively- Amylosecontent of sweet potato starch was in the range of 25.45+-3.48 %.
