Determination of cocoa mass and cocoa butter in bitter type chocolates in Ankara market

Bitter type chocolates belonging to different firms being sold in Ankara market were analyzed and cocoa butter and cocoa mass, used as a raw material in chocolate production, were calculated. Alkoloids were analyzed to determine cocoa mass by using spectrophotometric and HPLC methods. First year, percentage of cocoa mass was found 7, 72-16, 50 for 8 samples, second year, it was found 8,57-18,35 for 20 samples.
