Study on catching, raw material handling and processing of fishmeal by the questionaire of 16 fishmeal factories including 10 factories from Songkhla and 6 factories from Pattani provinces in April 1995. The fishmeal were sampled and analysed for proximate composition. The raw material used for fishmeal manufacture is the by-catch from other fisheries (traw net and purse seine), and the waste from the edible fisheries processing industry. The purse seine fisheries could gave the higher quality of fishmeal than the traw net fisheries products. The protein and ash content of fishmeal produced from the former fisheries products were 60-68 percent and 14-20 percent, and those of the later were 43-65 percent and 20-38 percent, respectively. While protein and ash content of fishmeal produced from the waste of fisheries processing industry ranged between 52-58 percent and 20-30 percent, respectively. The quantity of raw material used to produce fishmeal seem to be insufficient. Most of the fishmeal made in Songkhla and Pattani was steam dried and hot-oil dried. The final products were usually not supplemented with any anti-oxidants but anti-heat was frequently used. It was suggested that the fresh raw materials, well-processed techniques lead to products with excellent nutritional value. Therefore, fish used for production of fishmeal are necessary preserved with ice and processed immediately.
