Effect of harvesting period on yield and quality of canned whole kernel sweet corn

Three different harvesting periods of sweet corn (Insee 1) which is a new hybrid single cross producted by Kasetsart University were used to study for its effect on yield and quality of canned whole kernel corn. Yield and sweetness of the corn increased as the harvesting period was increased, eventhough there was no significant difference between the samples harvested at 18, 20 and 22 days after pollination. The results from proximate analysis of canned whole kernel corn in brine and in syrup showed that as the harvesting date was prolonged the moisture content of the corn samples was decreased with the increased in protein, fat content and the hardening in texture. There were significant differences between the samples harvested at 18 and 22 days, except that the fat content of those in brine had no significant difference. The results from sensory evaluation showed that the tasters increased their preference in color of the canned samples as the harvesting period was increased. There was significant difference in color preference between the samples harvested at 18 and 22 days at 5 percent level for the canned samples in brine and at 1 percent level for the canned sample in syrup. There was no significant difference between the samples both in brine and in syrup on odor, taste, texture and acceptability. The tasters mostly prefered the canned whole kernel sweet corn in brine which harvested at 22 days and the canned whole kernel sweet corn in syrup which harvested at 20 days.
