The theoretical and practical results of the work dealing with studying enterprises of bakery industry, in particular, Donetsk bakery and confectionery complex, in conditions of transitional economy, lie in deepening approaches to revealing and taking into consideration special features of mechanisms of managing the production and financial activities of an enterprise in the up-to-date conditions. Increasing in the stability of the enterprise in instable economic environment is linked with shortening the debt receivable and conducting marketing research. The policy of the development of economic activities of the enterprise is determined. Basic statements of functioning a system of managing the production quality in different economic systems are substantiated. Their realization is expected to facilitate searching and using production, financial and commercial reserves, increasing in production quality and competitiveness
