Milk fat quality of Simmental breed cows

Investigations were carried out on the milk fat of 100 Simmental cows being in second lactation. The milk samples from whole udder have been collected between 30-120 days after parturition. The following was investigated: fat quality (fatty acids and total cholesterol content), and technological suitability (iodine number, free fatty acids, fat globules dimension). Investigated milk had high level of long chained non-saturated fatty acids 4.11%, low level of saturated fatty acids - 62.37% and total cholesterol in amount 196.25 mg/100 g of fat. The level of free fatty acids, iodine number and the dimension of fat globules were satisfactory -0.75 +- 0.02 micro E/cubic cm; 40.18 +- 2.61; 23.71% of 7-10 micro m, respectively. The obtained data confirmed high nutrition value and technological suitability of Simmental cows milk fat.
