Contamination of plant for the production of biscuits with moulds

The contamination of machinery surfaces in the department for preparation and processing of raw materials and in plant for production of biscuits with moulds was ivestigated. It was found that all machinery surfaces, with expection of container for marmelade with rolls, were contaminated at different degree (0.2 to 5.4 x 10**2 moulds/square cm). Moulds were constantly present in the air (1.0 to 61.0/Petri plate), and workers hands (0.2 to 4.0/square cm). Only one sample of pack unit, out of five investigated, was contaminated with these microorganisms (5.0 x 10**2/square cm). Numerous moulds were isolated from the surfaces, and classified into 6 genera (Absidia, Alternaria, Aspergillus, Cladosporidium, Eurotium, and Penicillium). The most frequent were Aspergillus candidus and Penicillium aurantiogriseum. The same moulds and Eurotium herbariorum had the highest share in mycopopulations isolated from the air. Aspergillus candidus, Eurotium herbariorum, Mucor suaveolens and Penicillium aurantiogriseum were isolated from the workers hands and Cladosporium herbarum from the pack unit.
