Quality characteristics of the peanuts and products from the "Orpheus" sort

It is found out that the cultivar "Orpheus" peanuts and the products obtained as a result of the processing of the raw material to roasted peanuts, fried peanuts and peanut butters are characterized with a high energy value, which varies from 620 to 650 kcal, a high content of vegetative protein varying from 26 to 29%, a high content of essential amino acids reaching up to 26% and a high content of unsaturated fatty acids - about 85% of the overall fatty acids amount. The carbohydrates content is within the range 15-25%. The vitamin E amount varies from 8 to 10 mg/100g and for vitamin B1 - from 0.02 to 0.23 mg/100 g product. The fundamental macro- and microelements found in the cultivar "Orpheus" peanuts and the products obtained as a result of the raw material processing are magnesium, phosphorus, calcium, manganese, iron, copper, zinc, potassium and sodium. The calcium - element is presented with the greatest amount - from 650 to 780 mg/100g product, followed by the phosphorus - 220 to 275 mg/100g product and the magnesium - respectively from 137 to 152 mg/100 g product.
