A permanent grass cover and nitrogen fertilization trial on cv. Gamay was set up in Leytron at the experimental vineyard of the Federal agricultural research station of compounds level in the must and an increase of the higher alcohol phenyl-2-ethanol and 2- and 3-methyl-1-butanol concentration in the wines. Must and wine phosphorus level tended to increase in the grass cover plots without nitrogen fertilization. The duration of alcoholic fermentation increased very slightly when the nitrogen must content was particularly low. Wines of the grass cover plots were characterized as different as those without grass cover and there were less well appreciated. The aroma were less strong, less typical and the tannins more present and more aggressive. Wine olfactory quality tended to increase with the must nitrogen compounds augmentation.
