Markers of oxidative stress in enteral solution
Fogliano, V. | Marra, R. | Ritieni, A. | Scalfi, L. (Universita di Napoli "Federico II" (Italy). Dipartimento di Scienza degli Alimenti) | Bergamo, P. | Fedele, P.
In this work five different enteral formulas were analyzed for the presence of melanoidins and protein bound carbonyl compounds (PC). The antioxidative properties of these products were also investigated. PC accumulation in enteral formula depends upon their carbohydrate and lipid content. Enteral products differ for their melanoidin content. Melanoidin yield is affected by the antioxidant content.
