Because of the development of game farming and selective breeding, the deer seems to be a candidate for being the first new domesticated animal for 5000 years. The first modern deer farms appeared in New Zealand in the late sixties, while in Europe it was in Great Britain in the early seventies. The first deer farm in the Czech Republic was established in 1983. The rapid development of game farming is in relation with the demand for game meat. Deer meat is an ideal product for human consumption because of its high protein and mineral contents and low lipid content. The biggest production of this kind of venison is in New Zealand (about 20,000 tons per year), while in Europe it is about 6,500 tons.
