Study on quality improvement of palm toddy from Arenga with bowl at tree was conducted at Gunung Bentang Village, district of Sagaranten, Sukabumi regency, West Java started in October 1990 until June 1991. The objective of this research were to know the right method to improve the palm toddy quality as raw material of brown sugar. The research was done by using Completely Randomized Design with 7 treatments and 3 replications. The result of this research indicated that the bowl with Natrium Metabisulfit 100 mg/l palm toddy, was given the best quality of palm toddy with the highest sugar content that is 15.82 percent, the lowest water content 82.37 percent, the lowest alcohol content 0.27 percent and pH 6.925
