Changes in meat productivity during fattening of crossbred steers grazed for one season

The change in body composition of a set of crossbred steers (Japanese black x Holstein) that were fattened following one grazing season was investigated. The daily gain for the first four months of the fattening period was 1.29kg, and decreased to 0.91 kg after twenty months. The rib eye area increased until the first eight months of the fattening period. The intermuscular fat thickness increased over the first twelve months of fattening. The beef marbling number, rib thickness, and subcutaneous fat thickness increased throughout the fattening period. The muscle percentage of the carcasses decreased and the fat percentage increased until the first 16 months of fattening. The bone percentage of the carcasses decreased throughout the fattening period. The fat content and total pigment of M. longissimus dorsi and M. semitendinosus increased, but the shear value did not change throughout the fattening period. Thus, it appears that crossbred steers that have been grazed for one season need a fattening period of sixteen months in order to obtain constant meat productivity
