Effects of the average temperature during the ripening period and number of spikelets per square meter on the suitability for "Sake" brewing and yield of rice were investigated for a brewers rice variety 'Tosanishiki'. Based on the results of the investigation. it was concluded that the average temperature below 25.6 degrees C would be the favorable one during the ripening period. In addition. it was found that the spikelets number per square meter to lead to the optimum suitability for "Sake" brewing, i.e. the 1000 grain weight over 25.0 g and protein content below 7.4%. as well as to the yield of 480 kg/10a was in the range of 21,200 to 21,700 spikelets. And furthermore, it was concluded that the nitrogen fertilizer application which was made up of the basal dressing of 4-5 kg N and topdressing at ear formation stage of 2-3 kg N was an adequate method in this case
