Nondestructive determination of sugar content in watermelon by near infrared spectroscopy

Possibility of non-destructive determination of sugar content in a watermelon by near infrared spectroscopy was investigated. As a spectra collection method, transmittance and interactance methods were compared. The spectra from the interactance had no distinctive absorbance band. Therefore, it was thought to be inappropriate to use for the measurement of the watermelon which has thick peel. While in the spectra from the transmittance, several absorbance bands could be seen, and it was thought to be suitable for the measurement of watermelon. In the results of multiple linear regression analysis with the second derivative spectra for Brix value of the flesh, prediction accuracy of the calibration equation was better when half of the flesh at flower trace side was used than the disk of flesh at the equator part. As the accuracy of the calibration equation at the prediction developed for the flesh of the flower trace side, multiple correlation coefficient (R) was 0.726 and the standard error of prediction (SEP) was 0.573. This level of accuracy was thought to bear practical use, since threshold of the sugar content in watermelon was 0.5Brix from sensory test
