Alcoholic fermentation of Jerusalem artichoke tubers using bacteria Zymomonas mobilis and yeasts Saccharomyces cerevisiae were done. It was proved that both bacterium and yeasts are capable of ethanol production from hydrolysed ground tubers or juice from tubers of cultivar Rubik with the use of yeasts was 78.20 percent and bacterium 74.36 percent of theoretical yield
