Determination of filamentous fungi biomass antioxidative properties

Many filamentous fungi produce components with antioxidative properties. From Rhizopus species some antioxidative components have been isolated. Rhizopus species could hydrolise isoflavon glukozides into antioxidative isoflavon aglukosides. Antioxidative potential was followed by competitive kinetic test. In laboratory experiments Rhizopus oligosporus ATCC 48010 and Rhizopus oryzae ATCC 3461 have been tested. The exstract obtained by 38 hour cultivation of fungi on soybean substrate had 3-4 fold higher activity in comparison with raw material.
