Yeast biomass as a source of antioxidants

Yeast biomas is valuable source of compounds with antioxidant attributes. Esential microelements such as Cu, Zn, Mn, Se and Fe are include in cell defence mechanism against free radicals and oxidative stress. In yeast biomass and minearal enriched yeast biomass the concentrations of Cu reach values 8 micro g - 1mg, Zn 0.17 - 5 mg, Mn 8 micro g - 1.2 mg, Fe 0.02 - 10 and Se 0.1 micro g - 6 mg per gram of dry yeast biomass, respectivelly. Contain of carotenoid antioxidant - astaxantin is up to 800 micro g/g among others carotenoids - micro-carotene, micro-carotene, lycopen, etc. present in yeast biomass and showed antioxidant nature. Yeast biomass is reach in vitamins of B-complex. Some of them like riboflavin (B2), niacin (B3) and pyridoxine (B6) exhibit antioxidative properties. Vitamin riboflavin reaches concentrations from 7.5 - 100 micro g, niacin 135 - 700 micro g and pyridoxine 15 - 65 micro g gram of yeast biomass. Amino acid cysteine can react as antioxidant and in yeast biomass reach value 13 mg in gram of proteins. Generally, the yeast biomass is complex and a good source of compounds exhibit antioxidative activity what favours applications in human and animal diet.
