[Casings for sausage products]

Some issues of developing Ukraine's domestic meat processing industry are touched on, in particular, production of various sausages. Casings are known to occupy the key position in the sausages production. The final results of involving modern casings are as follows: a commercial success of the products in the market; increasing in the production volumes; the profitable activities of a commodity producer. At present the use of animal casings is limited. They are substituted for casings of the various natural, natural and synthetic as well as purely synthetic materials: collagen (proteinosinic, cutisinic ones) and hydrate cellulose. All the casings are divided in two groups. The casings providing high moisture and gas penetration belong to the first group. They are orientated towards the traditional production technology. The second group is comprised by those that have the low oxygen, carbon dioxide and water steam penetration. The experience of the Pento-Pack Co. (Boryspil, Kyiv region) is considered. For producing made-up casings the enterprise obtain certified raw materials from the world's best producers only. Their quality is under control. Specialized medical institutions studied the quality of polymer materials, colourants and dyes, involved in the casing production. All the elements of the production process are found to meet Ukraine's current sanitary and hygienic norms
