Major characteristics of vegetable consumption in Yugoslavia

This paper analyses both total annual vegetable consumption and each particular vegetable sort's consumption per household inhabitant - for household in general and for each of the three socio-economic types: agricultural households, non-agricultural and mixed ones. The time period covered is 1991-1999. The intensity of changes is quantified and illustrated using the "box-whisker" diagram, Cluster analysis and Chernoff's faces. Though in many European countries potato is not considered a vegetable, in this paper it is included in total vegetable consumption since that is the case in our statistics. All the households analyzed are characterized by low vegetable consumption. The effects of vegetable offer and prices as well as the reduction of consumers' purchase power have more intensively influenced the change in vegetable consumption in the non-farm households, i.e. reduction in tomato and red pepper consumption, stagnation in green beans and wide beans consumption, and an increase in cabbage, green and carrot consumption.
