Force analysis of cutting foodstuffs with disk cutting tool - modeling, geometrical and kinematic analysis

Cutting food products with a disk cutting tool has some essential priority, which makes the cutting devices, working in the same principle especially convenient for building-in into stream lines with different stages of mechanization and automation. In the present work a mechanic-mathematical model of cutting process with a disk cutting tool is nominated. This model takes into consideration the influence of all existing geometrical and kinematical characteristics. On the basis of the constructed model geometrical and kinematic analysis is done, paying attention to the interaction between the two groups of factors. The suitability of the model is checked by numerical analyses in the areas of the most frequently met numerical data of the input values - an angle of gradient and its limited values, depending on the thickness of the cutting film and the looseness between rear edge of the cutting tool and the slit product; the angle of whetting; the cutting speed and the feeding speed, expressed by the coefficient, equal to their ratio. The received dependence of the actual angle of cutting analyzed and explanatory summaries are made about some substantial results from cutting with a disk cutting tool.
