Exploring environment's influence in cultivating starter cultures for milk-acid fermentation of vegetal substances

The conditions for cultivating of three strains of LAB are examined with the purpose of establishing of optimal parameters and environment for receiving of maximum number of viable cells. Its find out that the number of population was the highest value when the two strains -Lactobacillus plantarum 24/V-1 and Lactobacillus casei 157/IV-24 are cultivating in MRS-broth at pH 5,50-6,0 and termperature 25-30C degree during 18-24 hours. The third strain Lactobacillus brevis 227/1-30 is advancing best in the broth Nr.3 at temperature 20-25C degree till 42-48 hours and the same pH interval.
