Tzankova, M. (Agricultural Institute, Soumen (Bulgaria))
There were analyzed 845 samples of buffalo milk from the Bulgarian Murrah. The content of fat, total protein, lactose, solid non-fat and total solids was analyzed through Milkoskan. The following results were obtained: 7.36; 4.19; 5.08; 10.10; 17.47.The genotypic correlations between the content of fat and total protein in the milk have very high values (rg = 0.885) and between the fat and lactose they are (rg = 0.655).The genotypic correlation regarding the lactose and total protein in the milk has average values (rg = 0.555).Simultaneously, a number of milk properties - thickness, acidity, ability of forming milk curdles, number of microorganisms, coagulation time and coagulation acidity were analyzed too.It was established that the factor number of lactation in buffalo cows significantly influences the content of milk, but the lineal belonging influences only the content of lactose.
