One of the most important group of antinutritional substances in soybeans and pea are protease inhibitors. Soybeans contain also haemagglutinins, saponins, goitrogens, estrogens, oligosaccharides and phytic acid. In sunflower seeds, there are phenolic compounds including especially chlorogenic, quinic and caffeic acids. Phytic acid bounding a big part of phosphorus is also present, while the trypsin inhibitor is the major antinutritional substance in pea.
