Cholesterol content variability in market eggs

Contents of cholesterol in yolk and whole eggs were estimated in 15 groups of hen eggs and 4 groups of quail eggs (10 pcs each). Eggs of laying hybrids Lohman Brown intensive largescale flocks contained in average 14.7 mg and 203 mg of cholesterol in 1 mg of yolk and in the whole egg, respectively. Corresponding contents of cholesterol in eggs of hens reared in small flock on family farms were 17.3 mg per 1 mg of yolk and 306 mg per whole egg, respectively. The differences were highly significant. Eggs of Japanese quail contained in average 17.7 mg and 60 mg of cholesterol in 1 mg of yolk and in the whole egg, respectively. Four groups of eggs marketed as "eggs with reduced content of cholesterol" were analysed as well. It was found out that this label is wrong because the contents of cholesterol in 1 mg of yolk and in whole eggs were 15.9 and 272 mg, respectively. Eggs of laying hens of the breed Araukana reared on family farms contained in average 17.9 and 264 mg cholesterol in 1 mg of yolk and in the whole egg, respectively.
