Having the possibility to present a paper on the above subject at the scientific colloquium commemorating on the 20th anniversary of Karoly Vas's death there are two ways to tighten this very wide issue. On the one hand I will speak about the activities connected with Karoly Vas's life-work and respectively about the special field where also myself had operated. As you will see these fields of food industrial mycology are mostly the same. This similarity originates from the fact that I was lucky enough to get guidelines from Karoly Vas himself to evolve my own scientific career I have been investigating yeast-fungi more than 40 years now but I have always followed the path that he put me on. In this way the microbial ecological approach was the determinant.
