Irradiation treatment experiments with fruits have resulted in several new observations from both product physiological and storage technological points of view. Special importance should be attached to the results connected with softening and changes of the membrane structure because the expansive investigations of enzymes in various fruits and species as well as the recognition of their effective mechanism were based upon the results. The microstructural investigations made significant contribution to understand the softening mechanism and they provided guideline also to the elimination of the unfavourable effects. For several decades the research activities have yielded a lot of results accepted at international level, too. The author feels lucky that she could participate in this research project as an apprentice of Karoly Vas.
