Evaluation of potato cultivars for desirable processing trailts before and after storage at higher temperatures

Evaluation of 7 Indian potato varieties and 5 exotic cultivars for important desirable processing traits before and after 75 days of storage under two higher temperature regimes revealed that exotic cultivars possessed higher tuber dry matter content and lower non-enzymatic and enzymatic discoloration, reducing sugars and phenolic compounds in comparison to Indian varieties, regardless of the storage condition. Both types of discoloration and the mean contents of reducing sugars and total phenols reduced during storage indicating an improvement in the processing quality. Exotic cultivars showed superior chipping quality and can be processed into good colour quality chips after storage at higher temperature.
