Ion leakage during storage at 18°C in six potato cultivars

Membrane stability and rate of ageing as indicated by ion leakage (%) were investigated in tubers of five Indian and one exotic potato varieties during storage at 18°C and 80% RH. Kufri Lalima showed significantly higher ion leakage after 75 and 180 days of storage and Desiree showed minimum ion leakage. The results indicate that ageing was faster in Kufri Lalima than in the other varieties.
